A white crystalline solid, ammonium carbonate (NH₄)₂CO₃ is frequently used as a leavening agent in baking, where it is referred to as Baker's ammonia. Because it breaks down into ammonia, carbon dioxide, and water vapor at 58 °C, it works well to create baked foods that are airy and porous. Its strong ammonia odor makes it useful as a reagent and for smelling salts in the chemical and pharmaceutical sectors. Although ammonium carbonate dissolves readily in water, it must be handled cautiously since it can emit irritant vapors when exposed to moisture or air.
